Hilton Molino Stucky Venice - From Mill to Masterpiece


The Hilton name has long conjured up timeless luxury, and with its dedication to long term sustainability, there is an extra excitement to hear the name. However, the Hilton Molino Stucky Venice may just be the jewel in its crown. Rising proudly from the serene waters of the Giudecca Canal, the Molino Stucky is a vision of grandeur and grace, a building that feels almost cinematic before you even step inside. Once a sprawling flour mill from the late 19th century, the hotel has been meticulously reborn—a place where Venice’s industrial past meets the refined luxury of today. Its red-brick façade, punctuated with neo-Gothic arches and towering spires, hints at stories of a bygone era, while the scent of polished wood and fresh linens welcomes you into a distinctly modern sanctuary.

The sustainability of this hotel is growing. The Hilton Molino Stucky Venice offers a free boat shuttle to and from the main square for guests. Their green hybrid boat shuttles are a fabulous element. Crossing the threshold, guests are greeted by an atrium that soars above, a cavernous space where sunlight filters through tall windows and plays upon elegant arches. There is a quiet theatricality to the design; every detail seems deliberately composed to draw the eye upward and inspire a moment of pause. The hospitality of course, plays a role in the feel of any hotel, and this doesn’t disappoint. We were greeted by Alessia and the team, who welcomed us with impeccable service. This large bustling hotel does not feel in any way claustrophobic as larger venues can. Plush green velvet chairs, a relaxing lunch lounge and little seating areas, including outside spots, are ideal. 

Restaurants, rooftop pool with bar and spa and wellness facilities offer a private retreat. Treatments designed to soothe and revive complement the rooftop pool’s sweeping views of the lagoon, creating a rare balance between urban sophistication and serene escape. Even in moments of leisure, the Molino Stucky reminds you that you are inhabiting a space steeped in history, yet wholly contemporary in comfort. The rooftop pool is another wow factor. This area offers holiday vibes mixed with quiet city retreat. It overlooks the entire canal and city, and pool slots are booked out during the summer, so you don’t have to worry about scrambling for a bed. An early morning pool slot is ideal for a quiet serene swim, whilst during the afternoon hours you can expect a more beach club vibe - a must-try for all the guests! 

The Rooms 

There are six floors of rooms and two floors above for suites. The first thing that delights the senses is the aroma. Corridors adorned with artwork of what used to be the famous Stucky Flour Mill. The rooms continue this balance of old and new, combining plush, contemporary furnishings with subtle nods to Venetian craftsmanship. From stunning canal views, the city unfolds, your own painting that one can simply step into. High ceilings, warm wooden floors, and muted palettes create a sense of spaciousness, while plush bedding and soundproofed windows ensure a deeply restful stay. Many rooms offer private balconies, framing sweeping views of the Giudecca Canal. Many facilities add poise and elegance to this already marvellous hotel, robes and slippers, a large-screen interactive TV, tea, coffee, and 24-hour room service is a favourable treat. Crabtree and Evelyn toiletries were a lovely touch in the bathrooms and walk-in showers which make it perfectly accessible also. 


Restaurants

Breakfast at any Hilton is always a treat, but this was a gigantic delight! A large main buffet and smaller buffets in the two smaller seating areas provided everything and more. From roast pork, to salads, octopus, salmon, to sweeter continental treats such as artisan cakes, breads, fresh fruit and local honey. They even have a children’s area which is perfect for families.  

Dining at the Hilton Molino Stucky is an experience that stretches far beyond the expected hotel offering; it’s almost a culinary tour of Venice in itself, framed by the lagoon. Each of the four restaurants has its own personality, ensuring guests can move seamlessly from refined fine dining to casual Venetian charm without ever leaving the building.


Aromi is the jewel of the hotel’s dining scene, a space where modern Italian cuisine is elevated to an art form. The menu is shaped by the rhythm of the seasons, with locally sourced ingredients reimagined into elegant, contemporary plates. Dining here feels like a performance — every dish arrives with quiet precision, each flavour layered and deliberate, and the setting by the water only heightens its sense of occasion. 

There are four or seven-course tasting menus on offer, meat, fish or vegetarian. It provides a beautiful ambience over the canal and it’s exquisite at sunset. The summer meat menu came with offerings such as sweet bread, pigion and flank steak. They also serve their own olive oil from Puglia which was an added sustainable bonus. 

By contrast, Bacaromi feels like a warm embrace. Inspired by the traditional Venetian bacaro taverns, it offers a slice of authentic lagoon life. The atmosphere is informal and lively, with small plates and hearty dishes designed for sharing, paired with local wines. It’s the kind of place where you can linger late into the evening, the chatter of other diners mingling with the aromas of freshly prepared Venetian comfort food. For those who prefer a more relaxed, all-day option, the Rialto Restaurant & Bar serves as the heart of the hotel. From morning coffee and pastries to simple, well-crafted pastas and pizzas, it’s a versatile space that caters to every mood. Light-filled by day and softly atmospheric by night, it suits both a casual lunch and a slow evening cocktail with equal ease.

Skyline Rooftop Bar & Restaurant 

Finally, there’s Skyline Rooftop Bar & Restaurant, perched high above the city with panoramic views across Venice. The bar has its own array of cocktails, each one representing the city. The bar manager Alan was very knowledgeable, and manager Andrea offered exceptional hospitality to all guests. It’s an ideal place for pre-dinner cocktails, to wind down and gain an appetite. 

Skyline Rooftop Bar reveals a striking new identity, blending vibrant colour schemes with daring patterns and contemporary design flourishes. The refreshed interior draws inspiration from Venice’s natural splendour: fiery shades of red and orange mirror the city’s sunsets, while calming greens and blues echo the shimmering lagoon below.

Guests can choose from an array of seating options designed to suit every mood – from intimate corners for relaxed aperitivi to expansive communal areas ideal for late-night celebrations. Bar stools offer a front-row view of Skyline’s expert mixologists in action, while the terrace provides a breathtaking panorama of Venice’s iconic canals. This summer marks the launch of Skies of Venice, an innovative cocktail menu designed to be as immersive as it is indulgent. By scanning a QR code, guests embark on a personalised journey to discover their ideal drink. Cocktails are tailored through three sensory profiles – taste, feeling, and consistency – each linked to an elemental symbol. Combined, these create a unique icon that represents every cocktail on the menu.

Curated by Bar Manager Valentina Mircea, the menu champions sustainability without compromising on creativity. Highlights include locally inspired ingredients, Hilton Molino Stucky Venice’s very own Stucky 1975 Venice Gardens Gin, and Skyline’s inventive “super lime juice,” crafted using the entire fruit for a zero-waste, maximum-flavour approach.

Trips and Sights 

Venice itself is a magical place before stepping inside any gallery or heritage site. The entire city is a work of art. However, Hilton Venice offers private and guided excursions to Murano, where guests can witness master glassmakers at work, and to other nearby islands, blending history, craftsmanship, and breathtaking scenery. From tailored tours of Venice’s iconic landmarks to peaceful lagoon cruises at sunset, these offerings turn a simple stay into something incredibly historical. Touring a glass factory lets guests witness this age-old craft in action, connecting them to a unique and enduring facet of Venetian culture.
